How to Plant Fall Asian Greens. By Patti Moreno, the Garden Girl There’s no better cure for the end-of-summer blues than extending your growing season. It’s as simple as planting cold weather crops. For me, that means a variety of Asian greens, which are great in stir fry and soup. (I have literally knocked snow off of my bok choy for beef stir fry.) Chinese kale and most kale varieties also do extremely well, if covered, and can add hearty crunch to soups. Bok choy and pok choy are quick to germinate and grow, so I can get a full crop in before the ground freezes. Same goes for many lettuces.
